I sure know how to pick 'em!

Good news, good food and good laughs

Good news:

We just got back from the doctor and apparently our scale was correct. He is 12lbs 2oz!!! More than we thought! He's gained almost 2lbs in 2 weeks.


Good food:


Last night was FHE with Jeff and Rachelle and it was lots of fun. Our activity this week was looking at Dave's mission pictures and stuff and next week will be Jeff's.


For dinner Rachelle and I made Pad Thai in our wok and it turned out pretty good. It doesn't smell good while you are mixing it but once it's cooked it is.


Pad Thai from "Everybody's wokking"

1/2lb dried flat rice noodles (about 1/4 inch wide)

sauce:
1/4 cup chicken broth
3 Tbl fish sauce
2Tbl catsup
2 Tbl sugar
1/2 t crushed red pepper

3 Tbl vegetable oil
1 Tbl minced garlic
1 egg

garnishes:
2 limes, cut into wedges
1 cup bean sprouts
1 green onion (including top) thinly sliced
2 Tbl coarsely chopped nuts
2 Tbl chopped cilantro

1. Soak the noodles in warm water to cover for 15 minutes or until soft; drain and set aside. Combine the sauce ingredients in a small bowl.

2. Place a wok or wide frying pan over high heat until hot. Add the oil, swirling to coat the sides. Add the garlic and cook, stirring until fragrant, about 10 seconds. Add the sauce and cook for 1 minute. Add the noodles; toss to combine them with the sauce and pour in the egg. Toss continuously until the egg is cooked, about 1 minute.

3. Place the noodle mixture on a serving platter, arrange the lime wedges and bean sprouts around the outside, and sprinkle the green onion, nuts and cilantro on top.

He's GAINING on us!

We weighed Carter this evening and since his last doctor's appointment 12 days ago he has gained 18oz!!!!! That's 1lb 2 oz!!!! I'm so happy and relieved. He feels bigger too and we have had to loosen the straps on his car seat and stroller etc. to accommodate his growing belly! His next doctor's appointment is Tuesday so we will hopefully get further food instructions. Here are the pictures (keeping in mind he's still VERY small for his age, but I can see a slight difference.)

My Twilight

Ok, so I know MANY people will disagree with me on this (mainly Karen...) but I was thinking today after finishing the 3rd book that I know who should be Edward and Jacob in the movies.

Yes, I do know that I am being influenced by their characters on Gilmore Girls, but they are perfect at those characters. Logan (my Edward) is the rich romantic who thinks he knows what's best. Jess (my Jacob) is the protective trouble maker. Actually thinking of Logan as Edward makes me like Edward more and I liked him better in the 3rd book than the others. I still prefer Jacob though. I just like his playfulness and sense of humor. I like Edward too now, but just because I think he's a good guy (using the term guy loosely) not because I love him. Don't hate me for my choices. I know what some of you are thinking...

Give hunger the bird!

Brook and I have been trying to build up a list of good places to eat, which has been a very daunting task. We have driven by Winger's many times as it is by our house and have been meaning to try it out. Our interest started because they have a gluten-free menu. Yesterday was our first experience and we were quite impressed. They have the best wings I have ever tasted. They are sweet, crispy, sticky and just the right amout of hotness. Their potato skins are also really good. They are also pretty reasonable, price-wise. So, if any of our readers are in the mood for some good eats and pass by a Winger's, turn around and prepare yourself.

Ode to Jonathan!

Family day



We've decided to have a designated family day once a week and today was that day! We had a later start than we were hoping for but we did all the stuff we wanted to with little to no complaining. First we went to my Great grandma Sabine's grave and took her some flowers. Tomorrow is 5 years since she passed away. It was nice to take Carter there and help him to leave flowers too.

Then we went to the zoo. We hadn't gotten to see the white alligator yet and it leaves in a few weeks so we decided not to wait! It was really fun and we plan to go back soon!

Dreams...

I've been known for having strange dreams, especially while I'm in the middle of reading Harry Potter. They range from full chapters of the book, to me being caught in a flood with Harry and Hermione, to the dark mark being over a building I'm about to enter, to my personal favorite... I was challenged to a wizard's duel by Snape in this huge outdoor arena. I was totally freaked out because I couldn't remember ANY spells when all of the sudden Tony Danza (no idea why) shows up and tells me he's going to somehow transfer all of his magical knowledge to me so I can better fight Snape. Well it turned out Tony didn't know any magic at all and I was lucky to wake up when I did or I could have ended up like Malfoy in bathroom in the 6th book! Sectum Sempra!
Any way the reason for this blog was that we just realized that I haven't had ANY Twilight dreams (I'm not complaining because I'd rather not dream about vampires) since I've been reading the books.
I have 2 theories:
1. J.K. Rowling creates an entire world in Harry Potter that it is easy to get caught up in where Stephenie Meyer creates within the real world.
2. I couldn't think of ANYTHING besides Harry Potter when I read those books and even my subconscious got obsessive...

Any other theories are welcome...

*EDITED* My little boy



Every new mom looks forward to certain things for when her child gets older. Well, I had a glimpse of one of my things tonight. I always think of a few years down the road when Carter is laying on the couch watching a movie and falls asleep and we have to carry him to his bed. Tonight, since Dave is at school and Carter started getting fussy about an hour before bed time I decided to turn on a movie for him since he hasn't watched one in a while. I was at the dining room table playing on Dave's laptop and listening to him talking to Hercules when all of the sudden I realized he was quiet. I looked over and realized he had fallen asleep. I just thought it was too cute and even though I had to wake him to give him his meds and swaddle him etc. it made me look forward to those moments when he's older. He's turning into a little boy and not a little baby!!!!! Before you know it he'll be driving!

He now understands "smile for the camera".





He's also gained a total of 9 oz since his doctor's visit a week ago. If you look up at his legs they even look a little chunkier! I'm so relieved! Also, look at the first picture and notice how long his eyelashes are and that his hair is getting thicker and darker. He's SO cute! (I know I'm biased...)



OK, it's later now and Dave is home from class. Rather than do a whole new blog I figured I would just add to this one. Some women get flowers, but my hubby knows me well!



I used to practically live over at the Moore's and one of my favorite things (besides how awesome all of the Moores are) were their HUGE 7-11 cups that we always filled with ice water when we were watching movies or TV. I mean, you never had to go back for more and it always stayed cold. When David started hanging out over there with me he got introduced to the giant 7-11 cups and when he realized I loved them so much he looked for one at the 7-11 in SR but they had stopped selling them. Well, he came home from class tonight with this in his hand looking very pleased with himself. I was very pleased with him too because I am SO excited to have my very own enormous 7-11 cup! It will always remind me of the Moore's and now I can stay better hydrated. I love my husband!
