We just got back from the doctor and apparently our scale was correct. He is 12lbs 2oz!!! More than we thought! He's gained almost 2lbs in 2 weeks.
Good food:
Last night was FHE with Jeff and Rachelle and it was lots of fun. Our activity this week was looking at Dave's mission pictures and stuff and next week will be Jeff's.
For dinner Rachelle and I made Pad Thai in our wok and it turned out pretty good. It doesn't smell good while you are mixing it but once it's cooked it is.
Pad Thai from "Everybody's wokking"
1/2lb dried flat rice noodles (about 1/4 inch wide)
sauce:
1/4 cup chicken broth
3 Tbl fish sauce
2Tbl catsup
2 Tbl sugar
1/2 t crushed red pepper
3 Tbl vegetable oil
1 Tbl minced garlic
1 egg
garnishes:
2 limes, cut into wedges
1 cup bean sprouts
1 green onion (including top) thinly sliced
2 Tbl coarsely chopped nuts
2 Tbl chopped cilantro
1. Soak the noodles in warm water to cover for 15 minutes or until soft; drain and set aside. Combine the sauce ingredients in a small bowl.
2. Place a wok or wide frying pan over high heat until hot. Add the oil, swirling to coat the sides. Add the garlic and cook, stirring until fragrant, about 10 seconds. Add the sauce and cook for 1 minute. Add the noodles; toss to combine them with the sauce and pour in the egg. Toss continuously until the egg is cooked, about 1 minute.
3. Place the noodle mixture on a serving platter, arrange the lime wedges and bean sprouts around the outside, and sprinkle the green onion, nuts and cilantro on top.
